Local, Organic, Seasonal & Sustainable Cooking in the ever-changing landscape of food service including the use of local, affordable ingredients; cost versus the nutritional value of sustainable organic foodstuffs; regional and Native American heritage and ethnic cooking; and incorporating this knowledge into cooking skills.
